But in the "River and Cask," at one of Mexico’s best cocktail bars, Fifty Mils, it’s the cocktail’s ice that slowly reveals layers of flavor. The Macallan Rare Cask is served over a single ice ball, and within that ice ball is a world of its own: Fifty Mils distills an essence of citrus, vanilla, and more, pure flavor then frozen into solid form. As the ice melts, the flavor of the drink evolves, the ice’s own character uplifting elements of The Macallan Rare Cask. The drink is served on a custom piece of Scottish slate, extracted from the banks of the River Spey, where The Macallan sources its water—telling the story of how ice, water, and whisky are connected through flavor essence and technique.
